Grilled Potatoes

These really are quite simple (as are many practically all of the things that I cook).

2-3 pounds red potatoes
1/2 onion (your choice variety-I use vidalia), chopped (or dried minced onion)
basil
parsley
garlic salt
olive oil

Scrub potatoes vigorously and cut into bite-sized pieces.  (Do not peel.)  Put in aluminum pan sprayed with cooking spray.  Add onion and remaining dry ingredients to taste.  (I am not big on measuring spices for these type of recipes.)  Drizzle with olive oil.  Cover with aluminum foil and place on grill for 20-30 minutes.


*I haven't tried this (yet) but I am sure you could easily put these in a glass baking dish and cook them in the oven as well.)

The Truth

Well, I have to make a confession several confessions before I share recipes here.

  • I rarely follow a recipe the way it is written.  I don't really like to be told what to do.  I guess I usually just think that I probably know better than whoever wrote that recipe.  (Sorry, Jeni!)
  • I don't even really measure stuff very often.  Especially spices.  I just kind of wing it.  I think mainly because it is SO.  HARD.  to get the tops off of those spice jars and get the measuring spoons in.
  • I am terribly routine when it comes to cooking, and I get bored easily.  These two things can lead to very random grocery purchases and my poor husband finding some strange interesting meals now and then.
Okay, there is the truth, or at least as much as I can think of right now.  :)
